While corn oil and vegetable oil are often used interchangeably in the kitchen, there are a few fundamental differences between the two. Corn oil:
- Is made from the germs of corn kernels located near the base of the seed husks
- Has a slight corn flavor at room temperature
- Has a more neutral flavor profile when heated
Vegetable oil, on the other hand:
- Is derived primarily from soybeans, although it may also be a blend of different plant oils
- Has almost no discernable taste at room temperature
- Retains its flavor profile throughout heating
Canola, corn, and vegetable oils are all categorized as “all purpose” plant oils, meaning they can be used in a variety of food preparations, be it deep-frying fritters, sautéing chicken breast, baking carrot cakes, or whipping up a little homemade mayonnaise.
